JALAPENO CORN BREAD 
1 c. cornmeal
1 c. buttermilk
2 eggs
4 pickled jalapeno peppers
1/2 tsp. salt
1/2 tsp. baking soda
1/2 c. bacon grease
1 onion, chopped
1/2 lb. grated Cheddar cheese

Mix all ingredients together in a large bowl except cheese. Pour 1 tablespoon of oil in cast iron skillet. Heat on top of stove until real hot. Remove from heat and spoon half of batter into skillet, then put half of grated cheese, then add other half of batter, then add other half of cheese on top. Bake at 400 degrees for 30 minutes.
