SPICY SAUSAGE & POTATOES IN A
SKILLET
 
1 1/2 lbs. (6 links) mild Italian sausage, cut into 1 inch pieces
10 sm. new red potatoes, quartered
1/2 tsp. pepper
1/2 tsp. thyme leaves
1 c. red onion, sliced 1/8 inch
1/4 c. fresh parsley, chopped
1 green pepper, cut into 1 inch pieces

In 10 inch skillet combine sausage, potatoes, pepper and thyme. Cook over medium high heat, stirring occasionally until potatoes are browned (10 to 12 minutes). Reduce heat to medium low. Cover; cook until potatoes are tender (8 to 10 minutes). Stir in remaining ingredients. Continue cooking, uncovered, until vegetables are crisply tender (4 to 5 minutes).
