SWEET AND SOUR CHICKEN 
1 lb. boneless chicken breast, cut in cubes
2 tbsp. oil
1/2 c. green pepper strips
1 can water chestnuts
1 c. carrot strips
1 clove garlic, minced
1 tbsp. cornstarch
1/4 c. soy sauce
1 can pineapple chunks in juice (8 oz.)
3 tbsp. vinegar
3 tbsp. brown sugar
1/2 tsp. ground ginger
1 1/2 c. Minute Rice

Brown chicken in hot oil in large skillet. Add pepper, carrots and garlic; cook and stir 1 to 2 minutes. Mix soy sauce with cornstarch; add to pan with pineapple and juice, chestnuts, vinegar, sugar and ginger. Bring to a boil. Meanwhile, prepare rice as directed on package. Brown rice is also very good with this.
