KASEY'S DIET COOKIES | |
This cookie is not only a healthy cookie, but a meal replacement cookie! 2 cups multi-grain Cheerios (crushed) 1 cup rice Chex cereal (crushed) 1 cup rolled oats 1 cup all-purpose flour 1 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 2 scoops vanilla soy protein powder (I use EAS brand) 12 pks. Truvia sweetener (made from natural stevia plant) 2 large eggs 2 tsp. vanilla 1 tsp. canola oil (light) 1 3/4 cup skim or fat free milk FOR FLAVOR VARIATION TRY THESE ADDITIONS (pick one): 1 tsp. cinnamon & 1/2 cup raisins 1/2 cup sugar-free chocolate chips 1 small mashed banana & 1/4 cup slivered almonds Preheat oven to 350°F. Mix all dry ingredients together in large bowl. Add eggs and liquid ingredients. Mix well. Place, by spoonfuls, onto cookie sheet lined with parchment paper or onto seasoned baking stone. Bake at 350°F degrees for 10 to 12 minutes. They bake up very cakey. Cool for 20 minutes then you can store them. This makes about 30 cookies. Note: I use these as meal replacement cookies and/or for a quick snack. At 6 cookies a day, this will give 5 days worth of meal replacements. They are very low calorie and high in protein. A wonderful alternative to junk food meals that will help slim the waistline. Each cookie has approximately 52.5 calories, 0.8g of fat, 9.76g carbs and 2.73g of protein. Submitted by: Kasey J. |
