LEMON SQUARES 
Crust:

2 cups all-purpose flour
1/2 cup powdered sugar
1 cup (2 sticks) butter

Mix flour, powdered sugar and butter as for pie crust. Pour into a 13x9-inch pan. Bake at 300°F for 25 minutes.

Filling:

4 eggs
2 cups granulated sugar
6 tbsp. lemon juice
1/2 tsp. baking powder
4 tbsp. all-purpose flour

Beat eggs, granulated sugar, lemon juice, baking powder and flour. Spread this mixture over the hot crust and bake at 325°F for 25 minutes longer. Sprinkle additional powdered sugar over it before cutting into small squares.
