LEMON CUSTARD SQUARES 
1 c. butter, room temperature
1/2 c. confectioners' sugar
2 c. flour
1/4 tsp. salt

Mix all the ingredients and blend well. Press into 10 x 13 inch pan and bake in 350 degree oven for 20 minutes. Remove from oven and grease sides of pan with butter. Immediately pour Lemon Custard below over crust.

LEMON CUSTARD:

4 eggs
2 c. sugar
4 tbsp. flour
5 tbsp. lemon juice, fresh
Grated rind from 1 lemon

Combine all ingredients in bowl; beat well. Pour custard over partially baked crust. Return to oven and bake 20 minutes. Cool and sprinkle with confectioners' sugar. Cut into 1 3/4 inch squares. Run the knife along side of pan, the custard sometimes sticks to pan.
