LEMON CUSTARD PUDDING CAKE 
1 tbsp. butter
1 c. sugar
1/8 tsp. salt
4 tbsp. flour
1/4 c. lemon juice
1 1/2 c. milk
3 eggs, separated

Heat oven to 350 degrees. Melt butter in bowl. Combine sugar, flour and salt. Add lemon juice. Add to melted butter. Heat until bubbly. Remove from heat. Mix egg yolk and milk. Add to above. Fold in beaten egg whites, pour into buttered 13"x9" baking dish. Set in pan of hot water, about 1 1/2" up the side of the pan. Bake 45 minutes until lightly browned. Sponge cake on top, lemon custard on the bottom.
