HASH BROWN CASSEROLE 
1 tsp. salt
1/4 tsp. pepper to taste
32 oz. frozen hash browns, thawed
1/2 stick butter, melted
1 sm. onion, diced
1 can cream of chicken soup
8 oz. sour cream
1 c. shredded cheddar cheese
1/2 c. shredded cheddar cheese

Combine all ingredients except 1/2 cup shredded cheese. Stir well. Spoon into greased 2 1/2 quart casserole dish. Top with 1/2 cup shredded cheese, pats of butter. Garnish with crushed cornflakes or Ritz. Bake at 350 degrees for 50 minutes.
