RAW APPLE COFFEE CAKE 
2 c. sugar
1/2 c. oil
2 eggs
4 c. cubed apples
2 c. flour
1 or 2 tsp. cinnamon
1 tsp. baking soda
2 tsp. vanilla

DO NOT USE MIXER.

Mix by hand thoroughly the sugar, oil, and eggs. Add apples and stir until coated with the sugar mixture. Add dry ingredients. Stir; add vanilla. Pour into greased pans. Makes 2 round. Bake at 350 degrees for 40-45 minutes.
