CRISPY CHOCOLATE CHIP, COCONUT, OATMEAL COOKIES | |
1 c. shortening 2 eggs 1 c. brown sugar 1 c. white sugar 1 tsp. vanilla 1 1/2 c. flour 1 tsp. salt 1 tsp. baking soda 1/2 tsp. nutmeg 1/2 tsp. cinnamon 1 (12 oz.) bag chocolate chips 2 c. flaked coconut 3 c. oatmeal Cream shortening, sugar, eggs and vanilla. Add flour, salt, soda and spices, mixing well. Add chocolate chips, coconut and oatmeal. Mixture will be very stiff. Mix well with large spoon. Drop onto cookie sheet or form into rolls about 2 inches in diameter and wrap in wax paper. Chill several hours or overnight. Cut roll into 1/2 inch slices. Bake at 350 degrees for 13-15 minutes until delicately browned. Makes approximately 5-6 dozen. |
