BEST EVER OATMEAL, COCONUT,
CHOCOLATE CHIP COOKIE
 
1 1/4 c. oatmeal
1 c. all-purpose flour
1/2 c. sugar
1/2 c. brown sugar
1 c. flake coconut
1/2 c. chocolate chips
1/2 tsp. baking soda
1/2 tsp. salt
1/2 c. vegetable oil
2 eggs
1 tsp. vanilla

In a mixing bowl, combine all dry ingredients. Add oil, egg, and vanilla. Mix thoroughly.

Drop by teaspoon onto a greased cookie sheet.

Bake in a preheated 325°F oven for 12 to 15 minutes. Allow to cool slightly before removing from pan.

YUMMY!! I made with 1/4 c oil and 1/4 c coconut milk and they were fantastic! Also, I shaped half the recipe into a log and rolled into some parchment paper, put into fridge for a couple days, then sliced and baked as above. They were just as tasty! Highly recommended for when you want to keep a quick dessert in the fridge for 1 or 12!

Suggest using semi-sweet chocolate morsels but I used milk chocolate so it's sweeter. I used rolled oats too but oatmeal might be better. I mixed oil and coconut milk...a winner. Will make again!

I substituted the oil for apple sauce and these cookies were outstanding. One egg was sufficient for me. It made two dozen plus 3 tablespoon sized cookies.

Dear god, these are fantastic. Granted, I didn't really follow the recipe. I did up until the '1 c flake coconut' part, when I realized I didn't have any coconut. I subbed for some craisins and sliced almonds, then figured 'what the hell' and added some dried lavender. Chocolate chips too. Oh, and also, I subbed some of the oatmeal for this 10 grain cereal I had because I didn't have enough oatmeal, and also used some nut granola. Really nice texture. And the batter was a little dry so I added just a hair of soymilk. So lots of changes, haha. But the heart of the recipe is the same (lots of oats, oil instead of butter) and these are pretty much the best cookies I ever made - almost gone in 2 days, and I live alone. I can't stop eating them! Strongly recommend the lavender, works really well with the vanilla, walnuts would be good too.

These cookies are the best!! Made them twice and found the dough very crumbly so I pressed it into a cookie cutter and it worked out great...Will try the extra egg and them the applesauce... I added chopped almonds... Sooooo goood!!

I made these with instant oatmeal and 2 eggs as described. They are amazing!!! I mixed the oil, vanilla and egg together before adding to dry mixture.

I followed the recipe, but instead of white sugar I did a 1/4 of honey and 1/2 mashed bananas and I used unsweetened coconut. Yum!
