BEST EVER OATMEAL, COCONUT,
CHOCOLATE CHIP COOKIE
 
1 1/4 c. oatmeal
1 c. all-purpose flour
1/2 c. sugar
1/2 c. brown sugar
1 c. flake coconut
1/2 c. chocolate chips
1/2 tsp. baking soda
1/2 tsp. salt
1/2 c. vegetable oil
2 eggs
1 tsp. vanilla

In a mixing bowl, combine all dry ingredients. Add oil, egg, and vanilla. Mix thoroughly.

Drop by teaspoon onto a greased cookie sheet.

Bake in a preheated 325°F oven for 12 to 15 minutes. Allow to cool slightly before removing from pan.

Wow! These are really delicious! I added another egg (2 eggs) because it was way to powdery. After you added the eggs, it tastes so wonderful.

I realized after putting most of the recipe together that I did not have any eggs. I read that someone added 1/4 cup applesauce to the recipe instead of an extra egg. I added 1/2 cup of applesauce instead of any eggs. Batter turned out pretty sticky. I also added 1 tsp of cinnamon. Cookies turned out good. I just needed to let them cool so they did not fall apart. Mmmm!

Added the extra egg (total of 2 eggs) as suggested, and subbed butter for the oil and they are FANTASTIC... Definitely a keeper!

So easy, fast and tasty. The batter was sticky and hard to form balls on the pan. Don't worry, they will be ok!!! They taste delicious, soft, chewy and gooey too. A bit on the oily side, but you can easily substitute apple sauce, or another alternative. Great recipe, will make again for the up coming holiday office party.

Don't have an electric mixer,so this recipe was perfect for me. I love the taste of butter, so used melted butter for the oil. Cookies are fabulous, with undertones of toffee flavor from the butter and sugar mixture. I'm in love!!!!

I used rolled oats and fresh coconut becaue that's what I had. I think oatmeal would've worked better.

This is my go to recipe whenever I'm making cookies. My addition? Scoop a couple tablespoons of Nutella to the mix (and good luck having any left for anyone else!)
