ZUCCHINI BREAD (2 loaves) 
3 eggs
2 c. sugar
1 c. oil
3 tsp. vanilla
2 c. grated zucchini, skin on
1 c. seedless raisins
3 c. flour
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
3 tsp. cinnamon

Beat eggs until foamy. Add sugar, oil, zucchini and vanilla. Combine flour, salt, soda, baking powder and cinnamon. Add to egg mixture. Blend. Stir in raisins. Pour into greased and floured loaf pans. Bake at 350 degrees for 1 hour. Can substitute walnuts for raisins, or use both.
