4 LOAVES OF ZUCCHINI BREAD 
9 eggs
3 c. oil
3/4 c. water
6 c. sugar
2 tbsp. vanilla
2 tbsp. cinnamon
1 tbsp. ginger
1 tbsp. cardamom; optional
9 c. shredded zucchini
2 c. raisins
1 c. mixed, candied fruit; optional
9 c. flour, some whole wheat
1 tbsp. salt
1 tbsp. baking soda
3/4 tbsp. baking powder
1 c. chopped nuts, pecan or walnut
1 c. oatmeal, uncooked
1 c. Grape Nuts cereal

1. Mix first 7 ingredients together in a large bowl.

2. Mix in the remaining ingredients (if you have a food processor, chop/shred the zucchini, skin too, in that).

3. Divide equally into 4 greased/floured pans (loaf pans).

4. Bake at 350 degrees for 1 hour, 325 degrees if glass loaf pan.

5. Cool 1 hour, remove from pan.

6. These freeze very well.
