QUICK DINNER ROLLS 
1 c. warm water
1 pkg. dry yeast
2 tbsp. sugar
1 tsp. salt
2 tbsp. shortening
1 egg
1 1/4 c. flour
1 c. flour

Dissolve yeast in warm water. Stir in sugar, salt, shortening, eggs and 1 1/4 cups flour. Add 1 cup flour and mix until smooth. Scrape down sides of bowl. Cover and let rise in warm place until double, about 30 minutes. Grease 12 large muffin cups. Stir down raised dough. Spoon into muffin cups, filling 1/2 full. Let rise 20 to 30 minutes until dough reaches tops of muffin cups. Bake 15 to 20 minutes at 400 degrees.
