ROLLED GRAPE LEAVES | |
150 grape leaves 2 lbs. ground round or lamb 1 lb. rice 1 med. onion, grated 1 sm. can whole tomatoes, drained 2 tbsp. salt 1 tbsp. pepper 1 tsp. allspice 3 tbsp. water Put meat in a bowl, add salt, pepper, allspice and water; mix well. Then add rice and grated onion and tomatoes and mix well. Stuff each leaf and place in a pan by row, alternating direction of each row. Place inverted dinner dish on top of rolled grape leaves. Add enough water to cover grape leaves, but not the dish. Cook on high until water starts to boil, then lower the burner so the grape leaves cook slowly. When half way cooked, add one cup of fresh lemon juice. Total cooking process is about 45 minutes. Check one grape leaf, if the rice is tender, it is done. |
