1 1/4 c. all purpose flour or 1 1/2 c. cake flour
1 c. sugar
1 1/2 tsp. baking powder
1/2 tsp. salt
3/4 c. milk
1/3 c. shortening
1 egg
1 tsp. vanilla

Heat oven to 350 degrees. Grease and flour square pan 8 x 8 x 2 inches or 9 x 9 x 2 inches or round layer 9 x 1 1/2 inches. Beat all ingredients in large mixer bowl on low speed, scraping bowl constantly for 30 seconds. Beat on high speed, scraping bowl occasionally, 3 minutes. Pour into pan. Bake until wooden pick inserted in center comes out clean, about 35 to 40 minutes. Cool and frost.
