BLUEFISH "CRAB" CAKES 
1 lb. skinned bluefish fillets, cooked by boiling (remove darker meat)
1/2 tsp. Old Bay seasoning
2 tbsp. minced green pepper
2 eggs, beaten
1/2 c. finely crushed cracker crumbs
4 tbsp. mayonnaise
1 1/2 Dijon mustard
Salt and pepper to taste

I prefer to go light with the salt and heavier with the pepper. Mix all ingredients. Fry until light brown. The bluefish might be better appreciated if the dark meat is removed and discarded. It tastes a bit strong and accounts for the bluefish's bad reputation. Dressing the bluefish as soon as caught also makes it alot better.
