SHRIMP JAMBALAYA 
1 onion, chopped
1/2 green pepper, chopped
1/2 c. olive oil
2 c. uncooked rice
1/2 to 1 lb. smoked sausage, sliced
1/2 tsp. garlic powder
1 tbsp. salt
1/2 tsp. pepper
1/4 tsp. allspice
1/4 tsp. cayenne
1/4 tsp. chili powder
1/4 tsp. basil
1 c. water
2 (16 oz.) cans tomatoes
2 (8 oz.) cans mushrooms
2 lbs. peeled and cleaned shrimp

Preheat Dutch oven. Add olive oil and saute onion and green pepper. Stir in rice and sausage; cook until rice is golden. Stir in seasonings, water, tomatoes and mushrooms. Add shrimp. Cover and simmer 30 minutes. 14 to 16 servings.
