SESAME CHICKEN KABOBS
chicken breasts, boneless & skinless (cut into chunks)
soy sauce
sesame seeds
sesame oil
balsamic vinegar
a squirting of liquid smoke
prepared horseradish
mayonnaise

Cut chicken breast in two-inch pieces. In a small skillet, toast the sesame seeds until they are brown and starting to pop. Place a large amount of soy sauce in a gallon Ziploc bag. Add chicken pieces, sesame seeds, a small amount of sesame oil, some balsamic vinegar and a little liquid smoke. Marinate overnight, turning bag over every now and then.

Soak bamboo skewers for an hour right before cooking. Skewer the chicken pieces on two skewers. This makes easier to turn them without them rotating. Grill till the chicken becomes very brown. Baste often with the remaining marinate, especially trying to leave some of the sesame seeds sticking to the chicken. Mix horseradish with mayonnaise and serve with chicken.
