CRAB PATTIES 
2 lbs. best crab meat
2 hard boiled eggs
1 raw egg
2 potatoes, cooked & mashed
1 sm. onion
2 ribs celery
1/4 c. butter
Pinch of nutmeg
Pinch of red pepper
Pinch of black pepper
Parsley, chopped

Saute onion and celery in butter. Mash potatoes and add spices. In a large bowl put crab meat and other ingredients. Form into patties, dip in flour, beaten egg with a little milk and bread crumbs. Refrigerate overnight and fry in deep fat.
