CRAB PATTIES 
Prepare the day before serving.

Grind or chop 1 bunch celery, 2 onions. 2 tbsp. butter 4 rounded tbsp. flour

Grind or chop onion and celery. Saute until soft in butter. Make a white sauce of 1 cup milk and flour. Let it thicken but do not boil. Add white sauce to onion and celery. Add cleaned crabmeat. Let on stove 10 minutes. Before frying make patties and dip in egg and cracker crumbs or bread crumbs. Add enough cracker crumbs to the mix to stiffen. (Add 4 hard boiled eggs if you like.)
