FISH FILLETS IN TOMATO SAUCE | |
2 c. tomatoes 1/2 tsp. salt 1 bay leaf 1 tbsp. onion, minced 1/2 tsp. peppercorns 2 lbs. fish fillets 1 tbsp. butter Cook tomatoes, salt, bay leaf, onion and peppercorns in greased skillet until reduced to half. Add fish and simmer 5 minutes. Carefully turn fish and simmer 5 minutes longer. Place fish on platter. Strain sauce, add butter and pour over fish. |
