CORNED BEEF HASH 
5 lbs. fresh potatoes, peeled and chopped
1 lg. onion, diced
2 cans Armour corned beef
1/2 c. oil or shortening
Salt and pepper to taste

Fry onion in oil or shortening in a covered skillet over low heat until onion is clear in color. Add drained potatoes. Fry potatoes in onion until done. If cooked over low heat, potatoes will be cooked thoroughly in about 45 minutes to 1 hour.

When potatoes are soft when punctured with tine of a fork, add corned beef and salt and pepper. Cook covered another 30 minutes, stirring often. Serve hot.

Note: During cooking time of potatoes, remember to stir potatoes occasionally being careful not to stir too often or potatoes will become mushy.

YES!! This is the way my Mom made this over 40 years ago. And it's stayed with me as the ONLY way to make hash from canned corn beef. I highly reccomend it. The only thing I do differently is use raw potatoes that I have peeled and grated.
