COUNTRY PEAR CAKE 
1 1/2 c. boiling water
1 c. rolled oats
1/2 c. butter
1 c. sugar
1 c. packed brown sugar
3 eggs
1 tsp. vanilla
1 tsp. rum flavoring
1 tsp. brandy flavoring
2 c. cored and finely chopped pears
1 1/2 c. flour
1 tsp. salt
1 tsp. ground nutmeg
1 tsp. ginger
1 tsp. cloves
1/2 c. chopped pecans
Whipped topping (optional)

Pour water over oats and let stand 1/2 hour. Cream butter and sugars; beat in eggs and flavorings. In large bowl, toss pears with flour; mix in soda, salt, spices and nuts. Fold in oatmeal and egg mixture until thoroughly blended. Pour into 9 x 13 baking dish. Bake at 350 degrees, 35 to 45 minutes. Cool. Serve with whipped topping if desired.
