CHOCOLATE MOUSSE 
Preparation: Easy. Cost: Fairly expensive. Preparation time: 25 minutes.

THIS IS WHAT YOU NEED FOR 4 SERVINGS:

8 oz. semi-sweet chocolate
3 tbsp. powdered sugar
3 tbsp. strong brewed coffee
2 to 3 egg yolks
1 1/4 c. whipping cream

1. Melt chocolate in a double boiler or in a pan with hot water.

2. Add sugar, coffee and egg yolks, 1 at a time. Stir until mixture has thickened. Remove from heat. Let cool.

3. Whip cream. Add to slightly cooled chocolate mixture.

4. Spoon mousse into individual serving dishes. Cover. Let cool in refrigerator for 1 hour.

5. Garnish each serving with a spoonful of whipped cream. Good served with: Sherry or other dessert wine.

TIPS: Don't let the water boil when melting the chocolate, it will scorch.
