7-UP SALAD 
2 (3 oz. ea.) pkgs. lime jello
2 cups boiling water
1 (8 oz.) pkg. cream cheese, softened
1 (8 oz.) can crushed pineapple, well drained
1 tbsp. sugar
1 tbsp. vanilla
1 (12 oz.) can 7-Up soda (or Sprite)
3/4 cup chopped pecans

Dissolve gelatin in the boiling water until dissolved completely.

Add the softened cream cheese and mix until cream cheese is completely dissolved.

Add the sugar and vanilla, stirring well.

Add the pineapple and then the pecans, making sure both are well distributed.

Chill in refrigerator until set.

Note: The pecans will float to the top. You can either stir the mixture once every 15 minutes for the first hour to distribute the nuts. Or, you can coat the pecans with a teaspoon of flour before adding them to the gelatin mixture. This will help to distribute the pecans throughout the salad.
