SPINACH-ROLL MEAT LOAF 
2 lb. ground turkey or ground chicken
1 chopped onion
1/2 c. fresh chopped parsley
1 tsp. minced garlic
1 egg or egg substitute
salt or Mrs. Dash and pepper to taste
1/2 c. dry bread crumbs or 1 c. fresh crumbs
1 pkg. chopped frozen spinach, thawed and drained

Omitting spinach for now, mix above ingredients well. Spray a sheet of waxed paper with Pam or any vegetable spray. Place meat mixture on paper and spread about 3/4-inch thick. Press spinach on top of meat mixture. Begin rolling mixture by lifting wax paper with both hands until meat rolls looks like a jelly roll (with spinach instead of jelly). Pinch ends and place seam side down. Sprinkle with paprika; score the top of the roll and place in baking dish or pan.

Bake, uncovered, in a 400°F oven for 10 minutes. Reduce heat to 350°F after 10 minutes.

Bake for an additional 25 minutes. Cover with a tent of foil, turn oven off and allow meat to remain in oven for an additional 10 minutes.

Feel free to improvise seasonings to suit your taste.
