SPINACH MEATLOAF ROLL 
3 lbs. ground beef
1 med. onion, chopped
3 eggs, beaten
1/2 c. bread crumbs
1/2 can tomato sauce
1 box frozen chopped spinach (drained)
2 cloves garlic, minced
1/4 c. milk (room temperature)
1/4 lb. Swiss cheese (6 slices)
1 tsp. olive oil
Salt
Pepper

Mix ground beef in large bowl with 3 eggs, chopped onion, tomato sauce, bread crumbs and milk. When all is blended, flatten with rolling pin square. Next saute garlic in olive oil. Add spinach, coat spinach. Let cool, then put spinach on flattened ground beef. Roll ground beef so that spinach is in center. Bake for 45 minutes (20 covered, 25 uncovered) at 375 degrees. When cooked, top with Swiss cheese or any cheese.
