TURKEY AND MUSHROOM CREOLE | |
1/4 lb. fresh mushrooms, sliced 1 med. onion, chopped 1/4 c. water 1/8 tsp. garlic powder 1 bay leaf 1 lg. green pepper, sliced 1 (16 oz.) can stewed tomatoes, chopped 1 lb. turkey breast slices, cutlets or tenderloin steaks (1/4 to 1/2 inch thick) Place all the ingredients, except the turkey, in a medium or large saucepan. Simmer, uncovered, for 5 to 6 minutes. Meanwhile, place the turkey in a shallow baking dish (in a single layer). Remove the bay leaf from the sauce and pour over the turkey, spreading it evenly to cover. Bake, uncovered, at 375 degrees for about 15 minutes or until done. Serve over a bed of rice. Serves 4. |
