PEANUT BUTTER CREAM PIE
3/4 c. powdered sugar
1/2 c. creamy peanut butter
1 (9 inch) baked pie shell
1/2 c. sugar
1 tsp. vanilla or other flavoring
1/2 tsp. salt
3 eggs, separated
2 1/2 c. milk
6 tbsp. sugar
1/4 c. cornstarch

Mix powdered sugar and peanut butter together until crumbs form. Cover bottom of pie shell with crumbs, reserving about 3 tablespoons of crumbs for top of pie. Mix together 1/2 cup sugar, cornstarch, and salt in medium pan. Beat egg yolks slightly; add milk. Stir until blended. Cook over medium heat, stirring constantly, until mixture comes to a boil, boiling 1 minute. Remove from heat and add vanilla. Cool to room temperature. Spoon into pie shell. Beat egg whites until foamy. Add sugar, 1 tablespoon at a time, beating well until stiff peaks form. Spread meringue over top of pie. Top with remaining crumb mixture. Bake for 5 minutes.
