ASPARAGUS SALAD 
1 bunch asparagus
olive oil, for drizzling
salt and pepper, to taste
1 pkg. grape tomatoes
6 oz. feta cheese
3 tbsp. olive oil
3 tbsp. vinegar
garlic powder, for sprinkling

Break tough ends off asparagus and place in roasting pan. Drizzle with olive oil and sprinkle with salt and pepper. Roast at 350°F for 10 minutes. Remove from oven and cool.

Slice asparagus into about 1-inch pieces and place in a large bowl. Wash and slice grape tomatoes in half and add to bowl. Add feta cheese and top with olive oil, vinegar and sprinkle with garlic powder. Mix.

Cover with Saran or plastic wrap and refrigerate at least one hour or overnight.
