BROWN SUGAR COFFEE CAKE | |
2 c. all-purpose flour 2 c. brown sugar 1/2 c. Crisco shortening 1 egg 1 c. buttermilk or sour milk* 1 tsp. baking soda 1 tsp. cinnamon 1/2 c. chopped nuts (if desired) Sift flour and measure. Mix with brown sugar. Cut shortening into flour mixture. Set aside 3/4 cup for topping. To balance, add egg, buttermilk, baking soda and cinnamon; stir until blended. Pour batter into greased 10x6x2-inch pan. Sprinkle top with reserved mixture and chopped nuts. Bake at 325°F for 50 minutes. Note: To make sour milk, add 1 tablespoon vinegar to regular milk and let sit 5 minutes. Submitted by: Claire McWade |
