MOM AUSTIN'S BLUEBERRY PIE
FILLING COFFEE CAKE
 
1 c. sugar
4 eggs
1 c. oil
1 tsp. baking powder
2 c. flour
1/2 tsp. salt
1 can blueberry pie filling
1 tsp. cinnamon
2 tbsp. brown sugar

Beat sugar and eggs; add oil and beat. Sift together flour, baking powder, and salt. Mix in dry ingredients; beat well. Grease and flour a 9 x 13 inch pan. Pour half of batter in pan. Spread with pie filling. Add rest of batter. Mix brown sugar and cinnamon together. Sprinkle over batter. Bake 40 to 45 minutes in 350 degree oven. Cool and serve with whipped cream or ice cream.

Really simple and easy... I did add vanilla and a little cinnamon to the batter and also doubled the brown sugar/cinnamon top. I added glaze also... kind of a sweet tooth :) Excellent!

This coffee cake is delicious! I made it twice so far. The second time I made it in a cake pan that's a little smaller than a 13x9. The cake comes out a little thicker this way, and I prefer it like that. Also, I made 1.5x the cinnamon sugar for the top. I will definitely be using this recipe again and experimenting with other pie filling flavors. Delicious!
