YOC SOUP (YOKOTA OFFICER'S CLUB) 
2 cups thinly sliced sweet onions
1/2 cup (1 stick) butter
1/4 cup all-purpose flour
1 tsp. salt
1/4 tsp. pepper
1 bay leaf
2 cups milk
2 cups soup stock
1/2 cup grated Parmesan cheese
6 slices French bread
6 slices Swiss cheese

Sauté onions in butter in large saucepan over low heat until tender and transparent, about 20 to 30 minutes.

Blend in flour and seasonings. Stir over medium heat until bubbly. Remove from heat. Stir in milk and stock. Bring to boil, stirring constantly.

When ready to serve, sprinkle Parmesan cheese and stir in. Put a slice of bread in bowl, slice of Swiss cheese on top. Pour hot soup over top.

Makes 6 servings.

I remember more than a few flights from Elmendorf (Anchorage Alaska) to Yokota, when discussion in the cockpit was centered on TOC Soup and what time we'd get to Yokota, for our favorite soup. I was uncomfortable that our enlisted crew members couldn't partake of this delight that was available at all times in the basement of the O Club. (Maybe they could go there, after all).
