MICROWAVE TAPIOCA PUDDING 
1/3 c. quick cooking tapioca
1/3 c. sugar
3 2/3 c. milk (skim)
1 egg
1 tsp. vanilla

In a large microwave-safe bowl with wire whisk, beat together all ingredients. Heat in microwave on high, uncovered for 13-15 minutes. Tapioca should be boiling. Beat with whisk until smooth. It will be thin but will thicken as it cools. Cover and refrigerate. Makes 6 servings, 137 calories each.

Since microwave ovens vary in power, you may need to adjust your cooking time.

My husband loves tapioca pudding, and I just didn't make it very much until I found this recipe! Super easy and very good! It's even easy enough for him to make it by himself!

I made this recipe and everything was going fine until the last 3 minutes when it all boiled over in the microwave! Not happy
