MICROWAVE TAPIOCA PUDDING 
3 tbsp. tapioca
2 c. milk
1 egg, separated
1 tbsp. sugar
1/3 c. sugar
1/8 tsp. salt
1/2 tsp. vanilla

Mix together tapioca, milk, 1/3 cup sugar, salt and egg yolk in 1 1/2 quart casserole dish. Let stand 5 minutes. Set casserole on shallow inverted bowl in microwave. Cook on power level 8 for 8-10 minutes or until mixture boils and is thickened. Stir in vanilla. Beat egg whites until foamy. Gradually add 1 tablespoon sugar beating until mixture forms soft peaks. Fold into pudding. Serve warm or chilled.

Since microwave ovens vary in power, you may need to adjust your cooking time.
