MICROWAVE RICE PUDDING 
1 1/2 cups rice
1 1/2 cups boiling water
pinch salt
1 cup sugar
3 tablespoons butter
1 1/2 teaspoons vanilla
2 tablespoons heavy cream (optional)

Combine first 5 ingredients in large bowl. Cover with Saran Wrap. Microwave on high for 20 minutes or until it comes to a boil. Remove wrap.

Stir and cook for another 30 minutes or until rice is done. Stir every 10 minutes. When done, add vanilla.

Optionally, sprinkle with cinnamon; stir in 2 tablespoons heavy cream and 1 tablespoon butter just before serving. Serve warm or refrigerate.

Since microwave ovens vary in power, you may need to adjust your cooking time.
