RHUBARB COOKIES 
1/2 c. shortening
1 c. firmly packed brown sugar
2 eggs
2 c. finely cut rhubarb
1 1/2 c. flour
1/4 tsp. salt
1/4 tsp. baking soda
1 tsp. baking powder
1/2 c. chopped walnuts
1 tsp. vanilla

Cream together shortening, brown sugar and eggs. Add rhubarb. Sift together flour, salt, soda and baking powder, add to fruit mixture with walnuts and vanilla. Drop by spoonful on oiled baking sheet. Bake in oven at 425 degrees. Makes 3 1/2 dozen.
