OVEN FRIED POTATOES (BAKED
POTATO WEDGES)
 
8 lg. potatoes, washed, unpeeled
1/2 c. oil
2 tbsp. Parmesan cheese
1/2 tsp. garlic powder
1/2 tsp. paprika
1/4 tsp. pepper

Wash potatoes and cut into 8 wedges. Mix remaining ingredients together. Arrange potato wedges, peel side down in shallow baking pans. Brush oil mixture over potatoes. Bake at 375 degrees for 45 minutes until golden brown and tender. Brush occasionally with oil mixture. If more brownness is desired, broil for 2 to 5 minutes.

Didn't have Parmesan so used onion powder and parsley flakes. Next time I will have Parmesan on hand. Yummy even with the substitutes.

I think this is a good recipe, but I had to add more garlic (I added minced garlic) for flavour. Remember, there is no salt, therefore the flavour has to be made up in other ways.
But the rest of it was GREAT! The fries turned out crispy around the edges, just the way I like them.
Also, I used sesame oil instead of olive oil. It gave the fries a smoky flavour, which I like!
