COCONUT CREAM PIE 
2/3 c. sugar
1/4 c. cornstarch
2 1/2 c. milk
3 egg yolks
2 tsp. vanilla
1 tbsp. butter
3 tbsp. coconut

MERINGUE:

3 egg whites
6 tbsp. sugar
1/4 tsp. cream of tartar
3 tbsp. coconut
1 baked pie crust

Mix sugar, cornstarch, milk; boil 2 minutes. Beat 3 egg yolks. Stir into small amount hot mix, then cook all together 2 minutes. Remove from heat. Stir 2 teaspoons vanilla, 1 tablespoon butter. Cool 1/2 hour; place in pie shell. Sprinkle coconut on top.

Meringue: Beat egg whites and cream tartar slowly add sugar until it stand in peaks. Spoon on top of filling. Sprinkle coconut on top. Bake at 350 degrees until golden brown.
