COCONUT CREAM PIE 
3 egg yolks
2 c. Pet milk
2 heaping tbsp. cornstarch
2 tbsp. butter
1 tsp. vanilla
1/2 c. sugar
1 c. coconut
1 baked pie crust

MERINGUE:

3 egg whites
1/2 tsp. cream of tartar
3 tbsp. sugar

Beat egg yolks in saucepan. Add milk and butter. Heat to very hot but not boiling. Then add sugar and cornstarch that has been mixed together, continue to stir until mixture has thickened and begins to boil. Add vanilla and coconut after removing from stove, mix thoroughly. Pour in a 9 inch baked pie crust. Add meringue (beat egg white with 2 tablespoons sugar, 1/2 teaspoon cream of tartar until it forms stiff peaks.) Bake until golden.
