COCONUT CREAM PIE 
1/4 c. cornstarch
2/3 c. sugar
1/4 tsp. salt
2 c. milk
2 tbsp. butter
1/2 tsp. vanilla
3 egg yolks, slightly beaten
1/2 c. coconut
1 (9 inch) baked pie crust

Mix cornstarch, sugar and salt. Add to hot milk. Cook until thick, stirring constantly. Slowly add small amount of hot mixture to egg yolks, stir into remaining mixture. Cook; cool. Add butter, vanilla and coconut. Pour into baked pie crust.

MERINGUE:

3 egg whites
1/4 tsp. cream of tartar
6 tbsp. sugar
1/2 tsp. vanilla

Beat egg whites with cream of tartar until frothy. Gradually beat in sugar. Beat until stiff and glossy. Put on top of pie. Bake in oven at 400 degrees for 8 to 10 minutes.
