GRANDMA'S BLUEBERRY JELLY
My grandmother was born in 1896. This was actually her blackberry jelly recipe but I have found that it works just as good for blueberries. I like making large batches and thought I should share just in case someone else wants to also.

2 quarts blueberry juice (a steam juicer works great)
3 quarts sugar
1/4 cup lemon juice
2 pouches liquid pectin (I use Sure-Gel)
1 to 2 tbsp. butter (to reduce foam)

Pre-measure sugar and lemon juice. Add blueberry juice to large pot. Heat on medium-high. Add lemon juice and continue to heat. When juice begins to steam slowly stir in sugar using a wooden spoon (my grandma said never use metal). When sugar is dissolved add butter. Bring to a rolling boil that can't be stirred down. Add both pouches of pectin. Continue to stir again to a rolling boil that can't be stirred down. Set timer for 1 minute. Ladle into hot sterilized jars.

Makes 8 pints - sometimes I have a half pint extra.
