ZUCCHINI STUFFED ITALIAN 
2 lg. zucchini
1/2 lb. raw ground beef
1 c. canned spaghetti sauce
1 tsp. parsley
1/2 c. Parmesan cheese
1/4 c. chopped onion
1/8 tsp. pepper
1/8 tsp. garlic powder
1/8 tsp. oregano
1/2 c. shredded Mozzarella cheese

Cut zucchini lengthwise and hollow out with a spoon. Mix the zucchini pulp with all other ingredients except the Mozzarella cheese. Fill the hollowed zucchini with the mixture. Bake at 350 degrees for 25 minutes. During the last 5 minutes, put shredded Mozzarella cheese on top of zucchini and bake until melted. Serves 4.

NOTE: This tastes a lot like pizza. A warm and filling side dish during cold weather and uses up surplus zucchini during the summer!
