STUFFED ZUCCHINI 
3 med. zucchini
1 med. onion
1/4 c. butter
1 sm. green pepper
1 c. herb stuffing mix
1/2 c. shredded Mozzarella cheese

Cook whole zucchini in boiling water just until tender, 8 to 10 minutes. Cool slightly, cut each zucchini lengthwise into halves. Spoon out pulp; chop coarsely. Place zucchini, cut side up in ungreased baking pan. Cook and stir onion in butter in skillet. Stir in chopped pulp, green pepper and stuffing mix. Divide mixture among zucchini halves. Sprinkle with cheese. Bake uncovered in 350 degree oven until hot, 25-30 minutes.
