STUFFED ZUCCHINI SQUASH 
8 zucchini squash
2 lbs. ground beef
1 c. chopped onion
1 c. chopped celery
3 tbsp. melted butter
1 c. soft bread crumbs
1 tsp. lemon juice
1 tsp. salt
1/4 tsp. pepper

Preboil squash for 5 minutes, cut in half. Scoop out pulp, leaving 1/4" thick shell. Chop pulp and saute with onion and celery in butter until tender. Mix in crumbs, meat, salt, lemon juice and pepper. Place zucchini shells on baking sheet and fill with meat mixture. Bake at 375 degrees for 25 minutes. Serves 8.
