JELLY-ROLL CAKE 
4 eggs
1/2 tsp. salt
3/4 c. sugar
1 tsp. vanilla
3/4 c. pancake mix

Combine eggs and salt; beat until thick and lemon colored. Add sugar, a little at a time, beating after each addition. Add vanilla and pancake mix; beat until smooth. Grease jelly roll pan, 10 x 15 x 1-inch, line with waxed paper and greased again. Spread batter evenly in pan. Bake at 400 degrees for 10 to 12 minutes. Sprinkle dry towel with confectioners sugar. As soon as cake is done, loosen edges, turn out on towel and peel waxed paper carefully from cake. Cut in half and spread on favorite jelly. Roll in towel. Cool. Sprinkle with powdered sugar, or maybe cut in squares and top square with jelly, then with another square on top.
