LEMON-BAKED CAULIFLOWER 
1/3 cup shallots, finely chopped
1/4 cup butter, softened
1/4 cup fresh parsley, finely chopped
2 garlic cloves, minced
1 tablespoon grated lemon rind
1 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon ground nutmeg
1 large cauliflower, core removed

Stir together first 8 ingredients. Place cauliflower pieces on a large sheet of heavy-duty aluminum foil; spread butter mixture over cauliflower.

Bring sides of foil to top; seal edges. Place on a baking sheet.

Bake at 375°F for 1 hour or until tender.

Yield: 6 servings

My family LOVES this recipe, even the non-cauliflower eaters among us. It goes quickly. I've never used the rind, just the lemon juice and it turns out beautfully. Also, my oven cooks this to perfection in about 45 minues.

I altered this recipe slightly. I added some plain Panko breadcrumbs and grated Parmesan cheese to the mixture. I removed the foil after 50 minutes of cooking so the cauliflower could get crusty. Yummy!
