If you get the Mexican-style rice a roni and add some chili pepper as well it tops it off perfectly!!

These were super, super easy to make and tasted delicious! My honey loved them!!

To make this recipe diabetic friendly: I substituted brown rice and ground turkey, seasoned w/ Italian seasoning, black pepper and red pepper flakes. Entire family just loved it (even the non diabetic).

How much brown rice did you use to substitute for the Rice-A-Roni?

This also works very well with the Rice a Roni Spanish or Mexican version.

Bought four green peppers and easily had enough left over for four more. Very tasty and simple.

Delicious and simple! I added cheese and onions but I'm sure the regular way would be yummy as well. Buy more than 4 peppers though! I did 5 and had lots of the mixture leftover.
